Matthew’s Ribs & Sauce
When Matthew was a little guy,
he came to me with a recipe and said, “Dad this looks
like it would taste really good!” So he and I tried a new
recipe. This is our adaptation of the Original rib recipe.
Through the years, having brought the dish to family
reunions and gatherings, we found some relatives felt we
were not welcome at future events, if we did not bring
 “Matthew’s Ribs”
 Preparation:
 1. Purchase a medium rack of pork ribs, have the rack cut
into 2” wide strips. (cut only across the ribs)

 2. Cut the strips so they are about 8” long, place them in a
pot large enough to cover with about 2” of water. Lightly
salt and bring to a boil. Reduce heat and simmer for 45
minutes. Prepare the sauce while the ribs are cooking -
 see 3. for sauce preparation.
After the ribs finish simmering, remove from pan, set aside
 and cool.

 3. Matthew’s Bar-B-Q Sauce
Serving size: 2 cup <> Preparation time: 25 minutes
Combine all sauce ingredients in a saucepan, bring to a
bubble over low heat. Cook for 15 minutes, stirring
 frequently.
Great, served as a condiment or in a small bowl for
dipping! 4 cup batches work Great!!

 4. After ribs are cooled, take strips and cut in-between each
rib, leaving you with individual ribs 2” long. Arrange ribs
on a rack in a roasting pan. Spoon sauce on each rib
sparingly, leaving sauce for future basting. Bake uncovered
at 350° for 40 minutes. Every 10 minutes turn the ribs ¼ turn
 and baste with remaining sauce.
